Holiday Candied Sweet Potatoes



The holidays are upon us and I'm hoping 
to post some yummy recipes in the next few weeks!  
I'm 48 years old and making "real" candied 
sweet potatoes for the first time!  
Don't get me wrong...I bake sweet potatoes a lot..love them!  
I don't even have to slather them with butter, cinnamon, 
brown sugar and marshmallows--
although that is just another level of wonderful!  
I have always used the canned ones for most of my 
sweet potato recipes, but today I thought I'd try my hand at 
starting from scratch--they were most delicious!

Holiday Candied Sweet Potatoes


This makes about 4-5 servings

4 large sweet potatoes, peeled and cut into 1/2 inch slices
2 TBSP olive oil
1/2 cup brown sugar
1/4 cup butter
1/4 cup corn syrup
1/4 cup water

Preheat oven to 450 degrees.
Spray your baking dish with nonstick spray.

In a large bowl, combine the sweet potatoes and oil; 
toss to coat well.
Pour the potatoes in the baking dish and bake 30 minutes.  

While they're baking, combine the 
remaining ingredients in a saucepan.
Bring to a boil, reduce heat and simmer for 8 minutes.  

Pour over the potatoes and cook for an additional 
10 minutes until hot and bubbly.

Toss the peeled and sliced potatoes with the olive oil...


Pour them in your baking dish...
Pop them in the oven for about 30 minutes...



Meanwhile, combine the remaining ingredients...
Bring it to a boil then reduce the heat and simmer 8 minutes...


Pull the potatoes out of the oven and 
pour this deliciousness all over them; 
Gently stir to coat...



Place them back in the oven and cook about another 

10 minutes or so until they're all bubbly like this...
