Pea Salad



This is a great side salad for your spring dinners.  
There are many variations...you can add onions if you like..
.that sweet fella loves it best when I add some pasta to it as well.  Enjoy!



Pea Salad

16 oz  Frozen Peas, defrosted
2 TB  Chopped Pimentos
1/2 cup Mayonnaise
3  Large  Hard-Boiled Eggs, peeled and chopped
1/2 cup  Grated Cheddar Cheese
1/2 tsp  Salt
1/4 tsp  Ground Black Pepper
1/4 tsp  Ground White Pepper

In a medium bowl combine all ingredients and stir until blended.  Will keep in refrigerator for up to 1 week.

I put the frozen peas in a strainer to thaw...




In a large bowl, add the mayo, drained pimento and the cheese...



Add the eggs and your seasoning choice...
you know mine is always Morton's Nature Seasoning!



Add the thawed and drained peas...



Stir gently until combined...
