I love sweet potatoes and ran across this new way of baking them. I was a little unsure of the garlic, but....oh, my!
It just gives the "sweet" a little "salty" to go with it...
my new favorite way to eat them!
Hasselback Sweet Potatoes
2 sweet potatoes
1 clove garlic, minced
2 TBSP butter, melted
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
Preheat oven to 425 degrees.
Scrub potatoes and set aside.
Combine the butter, garlic and spices.
Using a sharp knife, cut 2/3 of the way
down the potato in 1/4" slices.
Place the potatoes in a baking dish.
Pour the butter/spice mixture over the potatoes
and try to get as much as possible into the slices.
Bake for 45 minutes.

Mix the butter and garlic...
and the spices...
Mix it well...
Cut the potatoes like so...not all the way through...
Pour the butter/spice mixture over the potatoes,
working it into the cut parts...
They will look amazing like this!
After baking them on 400 degrees for 45 minutes,
they will look absolutely incredible like this!
