Iron Skillet Hasselback Parmesan Potatoes




Now that I've conquered the sweet potato hasselback style, 
I'm moving on to good ol' Idaho's!  
In this recipe, I've used the Greek Seasoning, 
because it's one of our favorites ...
but you can change the flavor up by using Italian...Rosemary...Mexican or really any spice of your choosing.  They come out tender, but crispy and absolutely yummy! 



Iron Skillet Hasselback Parmesan Potatoes

6-7 large potatoes
5-6 cloves of garlic, minced
1 tsp Italian seasoning
1/2 cup butter, cubed
1/4 cup Parmesan cheese, shredded
olive oil, salt & pepper

Brush bottom and sides of skillet with olive oil.  
Using a mandolin or sharp knife, 
slice potatoes into desired thickness.  
Arrange potato slices vertically and loosely in the skillet.  
Sprinkle garlic and Italian seasoning on top of potatoes.  
Season with salt and pepper to taste.  
Dot potatoes with butter.  

Cover skillet with foil and bake at 375 degrees 
for 1 hour until potatoes are tender.  
Remove foil, sprinkle with cheese and bake 
for another 15 to 20 minutes until crisp.

Oil the skillet with olive oil...



Sprinkle on the seasoning very generously...




Add the garlic next...





Dot with the butter...





Cover with foil and bake on 375 degrees for 1 hour...
After that time, remove the foil and 
sprinkle on the Parmesan Cheese...

Bake uncovered for an additional 15 - 20 minutes...
