Pineapple Shrimp Bacon Skewers

 

What a delicious and simple recipe for your next get-together.  
They can be made in the oven on a rack 
so that the bacon gets crispy all the way around 
or you can try them on the grill...either way, it's a winner! 




 Pineapple Shrimp Bacon Skewers

1 lb shrimp, cleaned and deveined  
1 can pineapple chunks, drained or fresh pineapple cubed
1 lb bacon of your choice, each piece sliced in half
Cattleman's Honey Teriyaki Marinade

Preheat the oven to 400 degrees.
Soak 30 wooden skewers in water for 1 hour. 
I usually soak a bunch at a time, then wrap the ones 
I don't use in foil and store them in the freezer, 
so I can have some on hand in a pinch!

Place a chunk of pineapple on top of a shrimp, 
then wrap the whole thing in half a slice of bacon. 
Thread a skewer through the whole thing to hold it all together. 

Repeat with the rest of the shrimp, pineapple, and bacon.
Brush all the skewers with the marinade then 
bake them for 10 to 12 minutes. 
Remove them from the oven and brush again, 
then return them for 7 to 8 minutes, 
or until the bacon is sizzling and the shrimp is cooked.

Remove from oven and mop with the marinade again.  
Serve warm or at room temperature.

Get the shrimp ready to wrap...



Cut each slice of bacon in 1/2, 
wrap it around a shrimp and pineapple...
Thread it onto your skewer and mop on some of the marinade...


 They will be mouth-watering like this!


Cook them on a rack for 10 minutes at 400 degrees; 
turn them over and slather on more marinade and cook 
an extra 7-8 minutes until the shrimp is done 
and the bacon is crispy...Enjoy!
