Lisa's Fettucini with Mushrooms, Spinach and Caramelized Onions






I was needing something just a little different and I found
all these wonderful ingredients just waiting in the fridge--  
This turned out absolutely delicious and will definitely 
become a part of our dinner rotation! 



 Lisa's Fettuccine with Mushrooms, 
Spinach and Caramelized Onions

Ingredients
3 onions
3 TBSP olive oil
salt
1 TBSP balsamic vinegar
 1 TBSP olive oil
8 oz baby bella mushrooms
3 garlic cloves, minced
3 cups fresh baby spinach
2/3 cup heavy cream
1/4 cup milk
1/2 cup grated Parmesan cheese



Step 1:  Caramelized Onions
1  TBSP olive oil
3 onions sliced thin and then in half
pinch of salt
1 TBSP balsamic vinegar

Heat 1 tablespoon olive oil on high heat in a large skillet. 
Add the sliced onions and cook on high heat 
for about 10 minutes, constantly stirring with spatula. 
The onions should start to brown, but without burning. 

Reduce heat to medium and continue cooking onions 
for 10 more minutes, stirring, as they brown even more.  
At this point add just a pinch of salt over onions. 

Continue cooking for 10 more minutes 
on low heat, stirring occasionally.  
Make sure onions don’t stick to the bottom of the pan or burn. 
You should have cooked onions for a total of 30 minutes.  

Remove from heat and sprinkle onions with 
a small amount of balsamic vinegar to deglaze the pan. 
Stir until the onions are coated.  

Step 2:  Mushrooms & Spinach
2 TBSP olive oil
8 oz baby bella mushrooms
3 garlic cloves, minced
3 cups fresh baby spinach

After you have started cooking onions, heat 2 tablespoons olive oil in another pan, and add sliced mushrooms and minced garlic. 
Add a pinch of salt. 
Reduce heat to medium-low and cook mushrooms and garlic 
for about 20 minutes, occasionally stirring. 

Add cooked mushrooms to the pan with caramelized onions, 
add 3 cups of spinach and stir on low heat just until spinach wilts.

Step 3:  8oz Fettuccine--prepare and set aside

Step 4:  Cream Sauce
2/3 cup heavy cream
1/4 cup milk
1/2 cup grated Parmesan cheese

Add heavy cream, milk, Parmesan cheese 
and stir over low heat until smooth and creamy.    

Add in the prepared Fettuccine and gently stir until coated.

Step 5:  To Serve:
Place the Fettuccine on your serving plate.  
Top with the spinach, mushroom and onions.  
Enjoy with garlic bread.

Add the balsamic vinegar...




Meanwhile...you're sauteing the mushrooms...


Add the garlic...



Now, the two can become as one...yum!



Add that tender baby spinach...



It will wilt perfectly like this...



Make the easy cream sauce for the pasta...

In a saucepan, add the cream and milk...


Stir in the shredded Parmesan...



Stir over the low heat until it's very creamy...
