Lisa's Sausage, Baby Spinach and Cheese Tortellini Soup




 Normally, I'm not a soup fan in the summertime...
but...I couldn't help myself! 
I've just been waiting to try this one out!
It was a warm hug in every bite! 


Lisa's Sausage, Baby Spinach and Cheese Tortellini Soup


llb Italian Sausage--we used mild but 
you can use the hot for extra spice
1 onion chopped
2 cloves garlic, minced
1 bag fresh baby spinach
20 oz Butoni Three Cheese Tortellini--it's in the specialty refrigerated case in the deli area of your grocery store 
32 oz chicken broth
2 cans diced tomatoes--seasoned with basil, garlic and oregano
If you don't have the seasoned ones, add 1 tsp each of 
basil and oregano or some Italian Seasoning
 8 oz cream cheese
1/2 container Smokey Chipotle Cream Cheese

Brown the sausage and onion with the minced garlic.  
Add the tomatoes, broth, seasonings; stir to combine.  
Toss in the baby spinach and let it cook down a bit...
Add the cream cheese and the Smokey Chipotle Cream Cheese.  Reduce heat to low and let the cheese melt.  
When melted, add the tortellini.  
Let simmer on low about 15-20 minutes and serve.

There are not a lot of "how to" pictures due to the fact that 
I'm now trying to cook, take pictures 
AND video my recipes....

just learning to spin another plate!

But, this was soooo easy!

Just brown the sausage along with the onion and garlic...
Add the broth, tomatoes and any seasonings...
Add the baby spinach and let it cook down a bit...
Throw in the cream cheese and the smokey chiptole cream cheese and let it get all meltey on low heat...
Add the tortillini and let simmer a bit....

It will be awesomely incredible looking like this!





It was so good served with Jalapeno Mexicorn Muffins...Yum!
