Zucchini Squares




Today is National Zucchini Day!  
I love all the recipes that everyone comes up with 
to make with this garden abundance veggie!  
This is a new one and one to add to my collection :)


Zucchini Squares

3 eggs beaten
1/2 cup vegetable oil
1 cup Bisquick
1/2 cup Parmesan cheese, grated
1/2 chopped green onions
3 cups thinly sliced zucchini, leave the skins on
1tsp dried parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon Italian Seasoning
1/4 teaspoon garlic powder

In your mixing bowl, combine eggs, oil, and biscuit mix.  
Add cheese, green onions, zucchini, and seasonings. 

  Spread batter in a 13x9x2 inch baking dish.  
Bake at 350 degrees for 25 to 30 minutes 
 or until golden brown.  

Let stand until cool enough to touch.  
Cut into small squares.  
Serve hot or at room temperature.

 Get those ingredients ready...


Add the eggs, oil and baking mix in the mixing bowl...



Pour in the cheese...



the green onions...



Slice that gorgeous zucchini thin and throw that in the mixing bowl too...



Put your spices together and add them next...



Mix it all up like this..



Pour it into your baking dish...



Bake at 350 degrees for 30 minutes...

Ahhh..perfection!


Cool, slice and enjoy!
