Sawdust Salad


 
Someone asked me recently if my Mom wore flip-flops.....

Does she wear flip flops?


My Mom--the little Diva, LOVES flip flops!

This is her kitchen pair.....



This is her pair she wears when she changes out of her kitchen pair and goes to her bedroom....

 Whew!! It's not easy being a Diva ....Just saying...:)

Today I'm sharing one of my favorite recipes that I was given many years ago by my sister-in-law, JoAnn.  
She called it Sawdust Salad.   

It's kind of a combination between a 
side dish and a dessert--
but no matter what course you choose 
to eat it with--it's light and delicious!






Ingredients:
1 small pkg orange jello
1 small pkg peach jello
1 1/2 cups boiling water
1 1/2 c cold water
1 large can crushed pineapple, drained and save juice





Pour both boxes of jello into 9 x 13 glass dish.  

 

Pour boiling water in next and stir until dissolved.

Next add the cold water and stir some more.

(There is no picture of this....but it's pretty easy...just get some cold water and pour over the jello just like you did the boiling water...it will be ok...really...)

You'll now add the drained pineapple to the jello.  


 (Ok....did I loose my camera....my mind...but you get the idea...just evenly place the drained pineapple into the jello....sheesh...)

Put in refrigerator to jell while you make the next layer.  

(It's just a jello salad, people....what did we do before step by step pictures...you're spoiled now, admit it!)

2nd Layer Ingredients:

thinking it was an off day...just saying...so many layers to keep straight...)


1 cup of pineapple juice, from the canned pineapple (you can add water to make 1 cup if you're a little short)
2 eggs, beaten
2 TBSP all purpose flour
3/4 c sugar

This is pretty though...you'll want to eat it right out of the saucepan...it's super delicious!!!

Combine all ingredients and cook over medium heat until thick like a pudding.  Pour into dish and put in refrigerator for about 1 hour to cool.

 

Pour pudding layer over the jello layer and spread to the sides of dish.
 Return to refrigerator to let jell about another hour. 

Final Layer

1 envelope Dream Whip topping
8 oz cream cheese, room temperature
1 cup shredded cheddar cheese


(The box to the cream cheese is missing...hmmm...)
 


Think we were throwing back glasses of sweet tea...



Eating sticks of butter...you know...things just kept getting crazy...
You have days like that right??  

Noah and Grandma do...just saying... 



(Here's the cheese that was also late for the recipe shoot...darn cheese...never can show up on time...)



 

Mix 1 pkg Dream Whip according to instructions with mixer.
Add cream cheese and beat until smooth.  

 

Spread over pineapple layer and then top with shredded cheese. Return to refrigerator again until ready to serve.
