Sharing this delicious one dish recipe today...

Fried Pies & Fireflies Taco Pie
1- 1 1/2 lb. ground beef
1 medium onion, chopped
1 pkg. taco seasoning mix
1 can of green chilies
1/2 c. water
1 (4 oz.) can sliced olives, drained
1 can crescent roll dough
1 c. sour cream
1 c. shredded Mexican cheese
2 c. crushed Fritos
Toppings: Shredded lettuce, diced tomatoes, salsa and extra sour cream
In
a large skillet combine the ground beef
and chopped onion; cook until no longer pink.
Drain and
return to the pan.
Add the taco seasoning mix, water and olives and green chilies.
Simmer 5 minutes.
Separate
the crescent dough into triangles, press out slightly and place in a 9"
pie dish, points toward the center of the dish.
Press seams together
to seal,
forming the crust.
Sprinkle 1 cup of the crushed Fritos
onto the crust.
Next, Add the meat mixture next.
Spoon the cup of sour cream over the meat
and carefully spread to the edges.
Cover with the shredded cheese and the remaining 1 cup crushed corn chips.
Bake until the crust is golden brown,
about 20-25 minutes.
Let sit for 5 minutes.
Slice and add toppings of your choice.
Enjoy!

The delicious ingredients...
Saute' the onions and ground beef...
Mmmmm...
Drain the meat and onions...
Put the meat back into the pan and add the chilies...
and the olives...
Mmmmm...again...:)
Add the taco seasoning and water...

Anyway, then simmer about 5 minutes
while you're making the crust...

and then mush it all together until
it is all melded together perfectly...
I crushed my Fritos in a baggie...
I'm really high-tec like that...
Sprinkle 1 cup into the bottom of the crust...
Pour the meat mixture in next...
add the cup of sour cream on next and let sit a moment
to soften before you spread it...
add the shredded cheese next...
like this...
add the last cup of crushed Fritos over the cheese...
Bake at 350 degrees for 20-25 minutes.
Get these lovely toppings ready...

with my eyes every time I get a chance!!
A few months ago, Mom and I saw a show about food trucks...
one in particular was Taco Bus....
and it is located in Tampa...
and my Daniel lives in Tampa!!
You see where this is going, right?
Anyway, I was fascinated that this family began
their food business in an old school bus.
They cook and serve their amazing Mexican food right out of this bus and people are lined up as far as the eye can see!
I love success stories like this :)
Anyway, I knew we were going to visit Daniel and Paige soon,
so I asked him if he had heard of these
amazing school bus food truck gourmets....
"Yes!" he exclaimed.
"I eat there quite a bit and their food IS amazing!"
"Will you take me there when we visit?"
"Sure!" Daniel said, "They're not far from our apartment."
I was so very very excited!
As I'm eagerly looking for a huge yellow bus,
we proceed to turn into a parking lot...
with a restaurant...
with a sign that says "Taco Bus"...
"Where's the bus?" I say....
"Oh, the bus is in another location...this is their restaurant,"
Daniel explains.
Ok, my excitement bubble was busted...
I didn't get to eat out of the "real" bus,
but their food was extremely fresh and delicious!
I did get to take this picture of a picture of the "real" bus...
That kinda made up for it....
I keep telling myself this...
sigh...
Next time, he promises...
we will visit the restaurant on wheels though...
can't wait! :)
