I guarantee that this one dish dinner you can make at home
will satisfy your inner cowboy or cowgirl!

So hold on to your boots while we take our favorite
country fried steak to a new level
by topping it with
cheesy mashed potatoes and homemade gravy!

Country Fried Steak Casserole

1/4 cup Kentucky Colonel Flour
(or just plain flour and add some salt and pepper)
1 1/4 lb cube steak
1 egg
1/4 cup milk
3/4 cup bread crumbs
1/4 cup vegetable oil
2 cups prepared mashed potatoes
1 cup shredded Cheddar cheese

Preheat oven to 375 degrees.
Spray an 8 inch square baking dish with non-stick spray.
Place the flour in a shallow bowl.  Coat each steak piece.  Set aside.

In a medium bowl, combine the egg and milk and whisk well.

Place the bread crumbs in a shallow dish.

Dip the steak into the egg mixture and then into bread crumbs.

Over medium heat, heat the oil and cook the steak
6-8 minutes until done.

Place steak into a single layer into your baking dish.
Spoon the prepared potatoes over the steak
and top with the shredded cheese.

Bake 20-25 minutes until warmed through and cheese is melted.

Our Quick Potato Recipe

2 cups water
1 stick butter
1 cup heavy cream
2 cups potato flakes
1 cup sour cream

1-2 tsp Morton's Nature Seasoning

Bring the water and stick of butter to a boil.
Remove from heat and add the cream and potato flakes.

The sweet fella in my life is just that...
an awful sweet fella!

Oh, yeah, sometimes we disagree--
Mainly because he just hasn't gotten the memo yet
that I'm always right!
But we never have huge disagreements....

Some "for examples"...

He never got made at me when I hit a dog with my car
and he had to come rescue me...
because I was crying...
because I thought I killed the dog...
and I thought I was dragging it under the car
because the car then was difficult to drive
and I thought the red fluid coming out from under it
was the dog's blood...
and that sweet man got there, put his work gloves on...
ready to remove "said" dog...
and discovered the dog must have just punctured
the power steering line and kept on rolling...
thus the difficulty steering the car and the "blood"...
sigh...

He never got mad at me when I hit the large piece of metal
with my yellow truck on my way to work...

He never got mad at me when I ran into the coyote
on my way home from work one night...

He never got mad at me when I hit the next dog
with Jessica's new SUV...
as we were bringing it home to her...
the car would not start...
we had to call a tow truck...
and then he discovered the fuel line had only been disconnected...

He also did not get mad when I took the convertible to work
and a 18 wheeler had a tire blow out in front of me...
it hit the front fender and knocked it loose,
traveled down the side of the car and made tire marks
and then knocked off a back hubcap just for good measure...

He and his friend had pretty much decided to weld
a "cow catcher" to the front of any vehicle I'm driving ...

Bless their hearts...

Anyway...all this I've put him through and he's still crazy about me!  But there's one thing we're having an issue overcoming...
going to Cheddar's together...

There's some bad JuJu in there for us...
can't figure it out...

We've tried to go twice...
had a disagreement both times...
before placing an order...
and left...
separately...

Totally unlike us at all...

Recently, we were going to get something to eat after work
and he said,
"Wanna go to Cheddar's?"...
seriously...
like that was even an option...

I said, "I will call and place a To-Go order and I will go pick it up, but I will never go inside with you...it does not work for us!"

"Good idea! Let's try it," that handsome mechanic said.

We pulled up,
got out of the truck,
walked hand in hand...
made it inside...
picked up our "to-go" order...
walked back to the truck,
turned and gave each other a "high-five"....

I told Jessie it was Step 1 of the Cheddar's 12 Step Program....:)
