I know it's just January, but I'm craving the grilling season!
This dish we created was absolutely delish and healthy as well...

Baja Grilled Fish and Veggies
1 TBSP blackening seasoning
1 TBSP cumin
1 TBSP paprika
1/2 lemon & 1/2 lime
4-6 tilapia filets or other fish of your choice
1 can chipotle corn, drained
1 small onion, chopped
1-2 TBSP oil
1 can black beans, drained
2 cups cooked rice of your choice, we love
our Cilantro Lime Rice
**You could also serve this recipe over baby Spinach
instead of rice with any of the additional toppings...
Additional optional toppings: cilantro, shredded cheese, pico, sour cream, ranch dressing
Squeeze the fresh lemon and lime juice on both sides of the fish.
Mix the spices together in a small bowl
and rub on both sides of the fish filets.
Grill fish on each side for several minutes until done.
Set aside.
Set aside.
In a baking pan, add corn and onions with the oil.
Cook on 450 degrees for about 15-20 minutes stirring,
until the vegetables are tender crisp.
Add in the black beans and stir to heat through.
In a bowl, layer rice or baby spinach,
corn/bean mixture and top with fish, flaked apart.
Top with any of your favorite additional toppings.

Squeeze the lemon and lime on each side of the fillets...
Season each side of the fish with the spice mixture...
Grill to perfection!
Prepare the roasted corn...
In your baking dish, add the corn and the chopped onions...
and a bit of the oil...
Roast on 450 degrees for 15-20 minutes, stirring occasionally...
Get the ingredients ready to assemble the plates...
Layer the rice, black beans, roasted corn...
Flake the fish apart and place on top...
