I had to work on New Year's Day this year,
so I left the cooking in the capable hands of that sweet man :)
I'm not a "greens" kind of girl, but he made this wonderful
recipe that knocked my socks off!
They were my favorite part of our New Year's Day meal
along with our delicious cornbread.
The Man's Collard Greens
1/2 pound raw bacon, chopped
1 onions, chopped
2 cloves garlic, minced
1 onions, chopped

Salt & pepper to taste or Morton's Nature Seasoning
Pinch cayenne
1 (12-ounce) bottle Beer, he used Miller Lite
1/4 cup balsamic vinegar
2 TBSP molasses
6 pounds collard greens

In a large pot, render the bacon until crispy, about 5 minutes.
Add
the onion and cook for about 6 to 7 minutes.
Season the mixture with salt, pepper and pinch of cayenne.
Add garlic and cook for 2 minutes.
Stir in the beer,
vinegar, and molasses.
Stir in the greens, a third at a time,
pressing
the greens down as they start to wilt.
Cook the greens, uncovered for
about 1 hour and 15 minutes.
