Cuban Fare: Citrus Chicken with Cuban Black Beans, Cilantro Lime Rice and Homemade Tortillas



When we visit Daniel and Paige, our very favorite place to eat is Bongo's --Gloria & Emilio Estefan's 
Cuban restaurant in Downtown Disney.  
We've never been disappointed by anything on their menu!  
As I was missing the taste of their food this week, 
I created a Cuban-theme dinner for us...delicious!  




Quick Citrus Chicken

1 Rotisserie Chicken--I love the Publix Rojo chicken--
but any would do
2 slices each--lime, lemon, orange

Slice the chicken breast  and dark meat from the bone. 
Place the slices in a baking dish.  
Squeeze some of the lemon, orange 
and lime juice over the chicken.  
Place the 6 slices of the fruit on top of the chicken.  
Cover and cook on 400 degrees for about 15 minutes.

Slice the chicken and debone the parts you cannot slice...
Place it in your baking dish...

Squeeze a bit of the citrus juice over the chicken...


Cover and bake on 400 degrees for 15 minutes or so...
just enough to warm it up and brown the citrus a bit...

Cilantro Lime Rice
2 cups water
1 cup rice--my favorite is Jasmine Rice
1/2 stick butter
1 TBSP fresh chopped cilantro
2 TBSP fresh squeezed lime juice

Bring the water and 1/2 stick butter to a boil.  
Add the rice, give it a stir and bring it back to a boil.  
Cover and leave on the eye, but turn the burner off.  
Do not open for 25 minutes.  
After the 25 minutes, uncover and give the rice a stir.  
Add the cilantro and lime juice.

Cuban Black Beans

1 pkg dry black beans
1 ham bone or 1 cup chopped ham pieces
2 cloves garlic minced
1 onion, chopped
2 TBSP chopped cilantro
1/4 cup chopped green onions
2 cups beef broth
2 cups water

Add all ingredients to your crock pot 
and cook on low for 6-8 hours.

This was the first time I've attempted homemade tortillas...
But the Pioneer Woman said I could do it so, I believed her!  
She has never lied to me even once...:)

Homemade Tortillas

2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 tsp salt
1/2 cup + 2 TBSP Crisco
1 cup hot tap water

You can make this by hand in a bowl, using a pastry cutter, 
 or like I did, with my mixer using a dough hook.  

Combine flour, baking powder and salt. 
Add the shortening and combine the ingredients.
Slowly pour in hot water, stirring to bring mixture together. 

Lightly knead dough 30 to 40 times, or until it becomes 
a cohesive ball of dough and is less sticky. 

Cover with a tea towel and allow dough to rest for at least an hour.
Roll into ping pong size balls, place on a tray, 
cover with a tea towel, and allow to rest 
for another 20 to 30 minutes.

Heat a cast iron skillet or griddle to medium/medium-high heat. 
One by one, roll out balls of dough until very, very thin. 

Throw tortillas (one by one) onto the griddle. 
 Cook on each side for 20 to 30 seconds, removing 
while tortillas are still soft but slightly brown in spots. 

Remove and stack tortillas, and cover with a towel to keep warm. 
Serve immediately or allow to cool 
before storing tortillas in a container. 

You can reheat the tortillas in the microwave, 
or wrap in foil and warm in the oven.

The simple ingredients...



Place the dry ingredients in your mixing bowl...



Add the shortening...



and the hot water...



Use the dough hook to mix the dough until it is combined 
and pulls away from the sides of the mixing bowl like this...



Cover the bowl with a towel and let it rest for 1 hour...



After this time, roll the dough into ping-pong ball size balls 
and let them rest another 20-30 minutes...



You will want to roll them very very very thin...
The Pioneer Woman says so...
The dough is extremely easy to work with ...



It doesn't matter that it's not a perfect circle shape...



Place it in the hot pan...



You'll turn it when it begins to brown underneath...



See...perfect!



Lay them on a clean tea towel so that you can keep them wrapped up as you stack and cook them...

Now, we're going to put it all together!

Layer a couple of tortillas...
your Cuban black beans...
Cilantro Lime Rice...
Citrus Chicken...
some Salsa Verde and a dollop of Sour Cream...

Amazingly delicious!
