Tortilla Breakfast Pizzas



This is a quick and easy breakfast idea that can be cut into wedges and grabbed on the way out the door in the morning!
I love it with all the toppings I can add, 
but today we're going with simplicity... :)


Lisa's Tortilla Breakfast Pizzas

2 Flour tortillas
2 Eggs
1/4 cup milk or heavy cream
salt & pepper
1/2 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup chopped ham or bacon
additional toppings:  tomatoes, peppers, onions, mushrooms
 
Preheat oven to 375.

Place tortillas on pizza stone or baking sheet. 
Heat a couple of minutes until the tortilla 
takes on a slight bowl shape. 

Whisk together eggs, milk or cream, salt and pepper.  
Stir in the cheese and ham or bacon.  
If you're adding additional topping you can stir that in now.  
Pour into the tortilla shell.

Bake for 10-12 minutes, until the egg mixture is set 
and the cheese is melted.  

Serve with a side of salsa.  

Cut into wedges and enjoy!

Place the tortillas on your baking stone...


A few minutes at 375 degrees and they'll have a slight bowl shape...



Place the eggs in a bowl...


add the milk or cream...


and the ham...


the cheese...


 salt & pepper to taste...



Pour into the tortillas...


Bake for 10 - 12 minutes until the eggs are set 
and the cheese is melted...


It's great with a side of salsa!

I'm also not sure why my plate looks like it's on its side 
rolling on the counter...
It's just one of those technical issues..:)
