Fried Pies & Fireflies Coca Cola Ham & Red Eye Gravy



If you love to serve ham for the holidays, 
I hope you'll give this recipe a try.  
It has been a favorite of our family for years now.  
Every time I want to cook a different recipe or 
tweak this one a little bit, there's a revolt!  :)  
This is Jessica's favorite recipe to cook for Thanksgiving 
for her friends in California. 
At her dinner last year, a couple of her vegetarian friends tried the ham and said it was "life changing"!  
Hope you'll find it life changing as well :)



Fried Pies & Fireflies Coca Cola Ham & Red Eye Gravy

1 bone-in ham, 5-7 pounds
1 can Coca Cola

Place ham in your baking dish.  Pour the coke over the ham.  Cover the ham tightly with heavy duty foil.  Bake at 350 degrees for 2 hours.  
Remove the ham from the baking dish, slice and enjoy!
Reserve 1 cup of the drippings for the Red Eye Gravy below.  

Red Eye Gravy


2-3 pieces of ham with a lot of the fat attached
1/2 cup coffee
1/4 cup water
2 tablespoons butter 
1 cup of the drippings from the Coca-Cola ham

Heat a skillet over medium-high heat. 
Add the fat from the ham and render. 
Remove the ham from the pan.    

To the pan, add the coffee and water and stir, scraping up any browned bits from the bottom of the pan. 
Add the butter and the cup of drippings; stir. 
 
Serve the gravy over the sliced ham.

Here goes...just pour that can of coke over the ham...


Cover it very tightly with heavy duty foil...


After baking at 350 degrees for 2 hours, 
it will be most beautiful like this...

Save a cup of the drippings for the Red Eye Gravy!

Slice off some pieces of ham with a lot of 
the fat attached and place in your iron skillet...


Keep frying on medium high heat until the ham 
and fat is brown and you have beautiful bits 
of ham and delicious grease from the fat...


Remove the ham and scrape the pan with a fork...


Add the coffee...


the water and butter...


Stir in the drippings...


Oh, my!

Red Eye Gravy, Black-Eye Peas, our Candied Sweet Potatoes, 
and Homemade Biscuits with Momma's Pear Jam...
